The effect of dynamic high?pressure microfluidization on the physicochemical and digestive properties of proteins in insoluble fraction of edible bird's nest

چکیده

Dynamic high-pressure microfluidization (DHPM) has been demonstrated as an effective method to increase the solubility of proteins in water-insoluble fraction edible bird's nests (EBNIP). Here, we further explored effects DHPM treatment on physicochemical and digestive properties EBNIP. The results showed that led increases fat absorption capacities, foaming properties, emulsifying EBNIP with decreased water-holding capacity being observed. This might result from mechanical force during can unfold protein molecular chain, destroy hydrogen bonds inter-linkage between molecules. In addition, samples exhibited increased vitro digestibility, degree hydrolysis free sialic acid release gastrointestinal digestion assay. conclusion, could be applied a novel processing modify macromolecules production nest (EBN)-related food.
